Grandpa Spiegel’s Famous Banana Nut Bread

My dad used to have many loaves of this Banana Nut Bread in the oven by 5:00 every morning.  Then he would spend the rest of the day giving it all away everywhere he went!

At his funeral the pastor had everyone raise their hand if they had ever had my dad’s Banana Nut Bread and over half of the people there raised their hands!  The recipe pictured above was actually handed out at the funeral.

It is truly a recipe that touched many people’s lives.   Here is the recipe for you!

  • 3/4 cup butter
  • 1-1/2 cups sugar
  • 1-1/2 cups mashed ripe bananas (3)
  • 2 eggs, well beaten
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking soda
  • 3/4 tsp. salt
  • 1/2 cup buttermilk
  • 3/4 cup chopped nuts (he preferred walnuts)

Cream butter and sugar thoroughly.  Blend in bananas, eggs, and vanilla.  Mix flour, baking soda, and salt together in a separate bowl.  Add dry ingredients to banana mixture, alternating with buttermilk.  Add nuts and mix.

Pour batter into greased and floured 9″ x 5″ x 3″ loaf pan, or split between two smaller pans.  Bake at 325 degrees for 1-1/4 hours.  Baking time is nearly the same even with split batch and smaller pans.  Bake until a toothpick inserted does not stick to the batter.  Turn onto cooling rack and cool thoroughly.

Freezes well!
