This is a great recipe that lets you throw everything in a crock pot at one time and let it cook until it’s done. There is no need to brown the meat or any other steps.
In the crock pot mix together:
- 2 pounds beef stew meat
- 2 large onions
- 3 large carrots cut into chunks
- 1 (16. oz) package frozen green beans, or I use fresh ones
- 1 (14-1/2 oz.) can whole or stewed tomatoes (undrained and chopped)
- 3 cups beef broth or 3 cups water and 2 tablespoon beef bouillon ( I prefer broth)
- 3/4 cup instant tapioca
- 1 tablespoon brown sugar
- 1 teaspoon pepper
- 2 teaspoons salt
- 2 bay leaves
I like potatoes in my stew, so those need to be added the last couple hours so they don’t turn to mush.
Cook in crock pot on high for an hour or so then turn to medium. Cook approximately 6 – 7 hours until vegetables are tender and meat is done. You can also cook in the oven at 300 degrees.
If there is too much liquid, add more tapioca, if too thick a little more broth.
