I love baked potatoes, but not the soggy ones that come from a microwave. This is how I make baked potatoes that are a little bit crisp on the outside, but oh so soft and fluffy on the inside!
Preheat oven to 450 to 500 degrees. Yes, that high! I use the higher heat, but didn’t want you freaking out! Wash the potatoes and dry. Place some olive oil in your hands and rub all around the potatoes. I like to sprinkle a little garlic powder on them.
IMPORTANT – Do NOT poke the potatoes! Everyone is taught to poke them so they don’t explode. Keeping the steam inside is what keeps them fluffy, and I’ve never had one explode yet.
Cook them in the oven turning once or twice so they don’t get too crisp. The high heat is what makes them so yummy! I don’t have an exact time, but they are done when a fork goes in easily. They require less time at that temperature.
I promise you when you make them this way, you will never microwave them again! Notice in the picture how they are little bit crispy and NOT shriveled up!
