These are very simple and not overly sweet cookies that we love. The recipe calls to roll them out thin, so they are crisp. We make them thicker so they are soft.
You only need to dirty a 3/4 measuring cup and 1/2 teaspoon!
- 1/3 cup butter
- 3/4 cup sugar
- 2 eggs, beaten
- 1-1/2 cup flour
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1-1/2 teaspoons cinnamon
- 1 teaspoon vanilla extract
Cream butter and sugar; add eggs. Stir dry ingredients and add to butter mixture, along with vanilla.
If you want to make them thin and crispy, chill the dough, then roll on floured surface to a 1/8″ thickness and cut with cookie cutter.
We like them thicker, so we DO NOT chill the dough and instead drop it with a spoon on the cookie sheet.
Preheat oven to 375 degrees, then cook on greased cookie sheets for 10 to 12 minutes. Makes about 2 to 2-1/2 dozen cookies.
