I love this recipe because it is so easy! There is no need to cook the noodles ahead. I don’t usually buy pre-made sauce in a bottle, but I used an organic bottled spaghetti sauce.
Brown beef and drain. Stir in sauce, tomatoes, and pepper. In another bowl, combine Ricotta cheese, Parmesan cheese and egg. Grease 9 x 13 pan.
Spread 2 cups of sauce over bottom. Arrange half of the uncooked noodles over sauce. Spread cheese mixture over noodles. Sprinkle 1 cup mozzarella cheese and 1-1/2 cups sauce over top. Add remaining noodles in dish and top with remaining beef sauce.
Cover with foil and bake at 375 degrees for 45 minutes. Remove and sprinkle with remaining mozzarella cheese. Cover loosely with foil and let stand for 15 minutes before serving.
