Simply the Best Peanut Butter Cookies

These are my favorite peanut butter cookies.  We always double the batch because the get eaten so quickly!

I use natural peanut butter with no hydrogenated oil, real butter, and unbleached flour.  It makes them a little bit better for you.

1/2 cup butter (1 stick)
1-1/4 cups flour
1/2 cup peanut butter 1/2 tsp. baking powder
1/2 cup sugar 3/4 tsp. baking soda
1/2 brown sugar 1/4 tsp. salt
1 egg

Mix butter, peanut butter, sugars, and egg thoroughly.   Blend all dry ingredients and mix into butter mixture.

Heat oven to 375 degrees.  Roll dough into 1-1/4″ balls.   Place on lightly greased cookie sheet.  Flatten balls with a fork dipped in flour, making a crisscross pattern on top.  Bake 10 to 12 minutes until golden brown.
